Ingredients

  • Sausage, 200g, sliced
  • Oyster, 150g, cleaned and shucked
  • Squid, 150g, cleaned and sliced into rings
  • Celery, 2 stalks, diced
  • Pea, 100g, fresh or frozen
  • Eggplant, 1 medium, diced
  • Yogurt, 100g, for serving
  • Cashew, 50g, roughly chopped
  • Cinnamon, 1 tsp, ground
  • Ginger, 1 inch, minced
  • Oregano, 1 tsp, dried

Seasoning

  • Salt, to taste, added during cooking
  • Black pepper, to taste, added during cooking

Instructions

Step 1

Preheat the oven to 200°C (400°F).

In a large skillet, heat a bit of oil over medium heat and sauté the sliced sausage until browned.

Add the diced celery, eggplant, and minced ginger to the skillet, cooking until the vegetables start to soften.

Stir in the squid and oysters, cooking for an additional 3-4 minutes until the seafood is just cooked through.

Add the peas, chopped cashews, cinnamon, dried oregano, and season with salt and black pepper to taste.
